It's definitely fall here! I'm loving every single aspect of it too!
I promised a blog post with the recipe for my pumpkin spice bread a week ago... but due to unruly dogs, that didn't happen. So, we did a Take 2 and this week worked out great.
Ingredients:
1 15oz can of pure pumpkin
3 cups of sugar
1 cup of water
1 cup of vegetable oil
4 eggs
3 1/3 cups of all purpose flour
2 tsp's of baking soda
2 tsp's of cinnamon
1 tsp of salt
1 tsp of baking powder
1/2 tsp of nutmeg
3/4 tsp of ground cloves
Directions:
Preheat oven to 350
Grease AND flour 2 loaf pans
Combine pumpkin, sugar, water oil and eggs and mix well.
In a separate bowl, combine dry ingredients and mix.
Slowly add the dry ingredients to the wet mixture and beat until smooth.
Divide batter between both loaf pans.
Bake for 60-70 minutes or until toothpick inserted in center comes out clean.
Cool for 10-15 minutes before removing from pans.
Tips:
Pumpkin pie spice could easily be substituted for the cinnamon, nutmeg and cloves. Add little or more spice depending on your preference.
Top with cream cheese or a pumpkin spice flavored cream cheese!
